Super Tasty Tips for Superbowl Sunday

Superbowl Sunday is always a day where so many of us fall off the diet wagon because we have stared at bland food for a month now. We think one or two little chips with dip or a few chicken wings won't hurt us. Well that thinking is wrong, it hurts the majority of every person who makes a resolution to lose weight. One chip, one cookie, 6 wings can hurt us and we won't want to go back to our bland, boring vegetables. 

So this Superbowl Sunday take a grilled vegetable platter to your party, or a baked chicken dish instead of fried wings, try grilled strawberry kabobs with lemon mint sauce, look for ideas that will be good enough for you to eat and also your family and friends. A savory, filling, yet finger friendly dish is Chicken Kabobs. Try pairing that with a Ginger-Lime Marinade and it makes it even better!
Ginger-Lime Marinade for Chicken Kabobs:
1/4 Cup Soy Sauce
1/4 Cup Vegetable Oil
2 Tablespoons Lime Juice, Fresh squeezed
3 Tablespoons Fresh Ginger, Grated fine
1/4 tsp. Cayenne Pepper
2 Cloves Fresh Garlic, Minced fine
1/2 tsp. Kosher salt
1 Zest of lime
3 Pounds of Chicken breast, 1-inch by 1-inch cubes
Place the soy sauce, vegetable oil, lime juice, ginger, pepper, salt, garlic, and zest of lime in a blender and blend on high for 2 minutes. Pour the marinade over your chicken breast and let marinate for at least 2-3 hours. Flavors will develop more the longer you marinate.
Place 3-4 pieces of chicken on a skewer with your favorite vegetable (zucchini, yellow squash, red onion, mushrooms, red or green bell peppers and season each kabob with a little more salt and pepper before grilling.
Place the kabobs on a grill over medium-high heat and cook for 4-5 minutes per side. Allow the vegetables to get a little char on them as well to not only soften them up but add a little smoke flavor as well. Remove from the grill and serve immediately and Enjoy!!
